Shuba Salad Recipe {Herring Under Fur Coat} (1)A simplified version of the popular Russian Shuba Salad or Herring under Fur Coat as sometimes it is called, is a salad that consists of layers of beets, potatoes, carrots, onions, eggs and chopped herring. Each layer is thinly spread with some mayonnaise. Typically this Shuba Salad is served at big holidays like New Year’s or Christmas.

In this simplified version of Shuba salad, we still have the same amount of flavor, minus half the labor involved, since it is all cubed and just combined together. If you have one of THESEDicer contraptions, it makes it even easier since it takes care of the tedious work of dicing.

A classic Russian dish, this shuba salad recipe is made with fish and vegetables.

Ingredients

  • 3medium sized Potatoescooked with skins on, diced to ¼"
  • 2large Beetcooked with skin on, peeled, diced to ¼"
  • 2medium carrotscooked with skin on, peeled, diced to ¼"
  • 6Eggscooked, peeled, diced to ¼"
  • 4scallionschopped
  • ½cupmayonnaise
  • 2Tbspoil
  • 4fillets of herringcut to ⅓ inch slices or cubes

Also

  • 1large sweet onionpeeled, cut in half and then cut into thin slices
  • 2Tbspwhite vinegar
  • ½tspsalt
  • 2Tbspolive oil

Instructions

Cook the vegetables and the eggs

  1. Rinse all vegetables until clean under running water.

  2. Place 2 medium sized potatoes and 2 carrots into a medium sized pot and cover with water. Cut the carrots in half if they do not fit. Cook over medium heat for about 20 minutes after the water comes to a boil, or until the vegetables are easily pierced with a fork, but are not overcooked or fall apart.

  3. Place 2 large beets into a different pot, cover with water and cook for about 1.5 hours or until soft and easily pierced with a fork or knife.

  4. Once the potatoes, carrots and beets are cooked, drain the water and completely cool before peeling the skins off.

  5. To make it easier to cut the vegetables in cubes, place them in the freezer for for 15 minutes.

  6. Place the 6 eggs into a pot and cover with water. Cook over medium heat for 5 minutes past the boiling point. Drain the water. Pour cold water over the eggs and allow to cool. Peel the eggs.

Cut everything and Combine

  1. Cut the vegetables and eggs to a small dice, about ¼ inches.

  2. Chop the scallions.

  3. Combine the vegetables, eggs and scallions in a large bowl. Add ½ tsp salt, 1 tsp black ground pepper and ½ cup of mayonnaise and 2 Tbsp olive oil. Stir everything to combine.

  4. Taste and adjust the seasoning as desired.

  5. Serve the salad with marinated onions and herring on the side

How to make Marinated Onions

  1. Cut the onion into half rings. Add 2 Tbsp vinegar, ½ tsp salt, 1 tsp sugar and 2 Tbsp olive oil and stir. Add the herring and stir together.

    In Ukraine we don’t add eggs, carrots, and we don’t do this way at all! You don’t want to mix everything it’s wrong! You have to put by layers. 🙂

      As noted in the first sentence of the post, this is a simplified version of the true, layered version of the Shuba salad.
