Soup Maker Vegetable and Lentil Soup

Ingredients
- 500 g Mixed Vegetables I used Potatoes, Carrot and Turnip
- 50 g Lentils
- 1 clove Garlic
- 1 teaspoon Cinnamon Spice
- 1 Stock Pot
- 1 pinch Salt
- 1 pinch Pepper
- 800 ml Vegetable Stock
Instructions
As simple as can be. Just throw all your ingredients into the pot.
Set your soup maker to the smooth setting. As this soup cools, it will thicken a fair bit. It depends if you'd rather make it and eat it fresh, or wait until it has thickened and then re-heat it.
Season with other herbs or spices if you'd like a stronger taste.

I’ve just bought the Morphy Richards one without the sauté option. I am working my way through the cookbook which came with it and have started on yours. Does your soupmaker have a larger capacity than the one I’ve got? I’m using a small frying pan where you say you are using the sauté option. I’m finding the recipes very helpful .Reply

I think all Morphy Richards soupmakers do up to 1.6 litre. I usually do a full pot at a time.

I’ve just bought the Morphy Richards one without the sauté option. I am working my way through the cookbook which came with it and have started on yous. Does your soupmaker have a larger capacity than the one I’ve got? I’m using a small frying pan where you say you are using the sauté option. I’m finding the recipes very helpful .

Hey. I just bought morphy Richard soupmaker and will start soupin:-p But do you use already cooked lentils or the hard ones? I love ur blog !!

For that recipe, I simply rinse my lentils and don’t precook. It’s a preference really. I do it that was as it’s a small amount and they take 15-20 minutes to cook anyway, which is around the time of a soup. It is the only one of the dried pulses I wouldn’t pre soak or cook though.

Hi on you vegetable soup, you say butter ? Now does this go into soup make or is this to fry the leeks and onions ?

It’s usually used to saute leek and onion etc. A tiny bit of butter also helps stop frothy scum from forming when the soup is being cooked.

I found that the lentils stuck to the bottom of my soup machine (VonShef) it wasn’t good. What had I done wrong?

Hi Debbie. I don’t know the Von Shef machine at all. Did you stir really well when you put the lentils in? I think some soup maker manufacturers recomment fluid first, then some ingredients. My machine has a non stick base, but I don’t know whether the Von Shef has. Sometimes, the odd thing sticks slightly to the bottom of mine, but it’s rare. I’d likely add lentils last to the pot if they stuck in mine, and try it like that.

You can certainly leave the lentils out. I’d be tempted to add more veg though, to balance it out and thicken for a smooth soup.

The recipe Says 1 stock pot & then later mentions 800ml of vegetable stock pot so am I effectively using 2 vegetable Stock pots?

For this, I had some vegetable stock, so only used 1 additional stock pot, but if I had been making it without the pre-made stock, I’d have used 2 vegetable stock pots.

Your blog encouraged me to buy a Soup maker as I love soup and gadgets.
It worked straight out the box.Not tried chunky yet. Does it stir albeit slowly?

Tried my own variant today and was very happy with result – I used carrots, sweet potato, onion, garlic, a green chilli, tin of tomatoes, 1 yellow pepper, red lentils, pint of stock and water with half tsp coriander, half tsp ground cumin. Spicy and comforting. Add salt and pepper to taste on serving with sprinkling of coriander leaves.

I made this but I didn’t use enough vegetables still tasted really nice though. Also I’d bought lentils but kept putting off using them in the soupmaker because I was worried that they wouldn’t cook in the short time. I was so pleased to see this.

Glad you enjoyed it. I’d be tempted to try a little more lentils too with my next lentil trial. I’m always worried that I end up with too many lentils and a porridge consistency.
