Tigernut Granola Recipe (Nut Free Grain Free & Gluten Free)

The idea for a gluten free nut free granola was inspired a few months ago when I made thesehealthy oatmeal breakfast bars.

Creating a gluten free grain free cereal that is also gluten free, keto, vegan and nut free, has been on my list for a while now.

I wanted to make a similar glutenfree granola recipe without oats, also grain free and nut free. That’s for those days when I want to take a break from grains and eat less carbs but still enjoy my crunchy cereal.

Tigernuts are just ideal (they are both gluten and nut free) because they are technically root vegetables (tubers) and have a pleasant taste similar to both coconut and almond. Packaged tigernuts are usually sold dried and you can buy raw whole tigernuts or sliced tigenuts, which are perfect for making a granola.

Usually grains and nuts are the most common ingredients in homemade granola, and more specifically the oats. So I decided to make a gluten free granola recipe without oats.

Honestly it was quite a challenge to make it look more than a pile of seeds. But there is indeed a way to make a vegan, nut free, gluten free granola without grains at all and even without nuts – which makes this granola recipe alsoketo friendly!

To find the right combination of crunch, texture, and sweetness I combined tigernuts, a mix of seeds (pumpkin, sunflower, chia and hemp seeds), dried fruit and coconut cream. I used the cream in order to avoid the oil and butter, but to help that crunch from as a result.

And the flax meal – to help glue everything together. Thus this gluten free nut free granola recipe is not only keto, nut free, low in carbs, but alsohigh in fiber!

How To Make A Vegan Keto Granola Also Nut Free?

Most of grain free granola recipes whether they are paleo or keto, use a lot of nuts.Ok, so now if we’re taking out the grains and the nuts, what else is left to form a crunchy granola?

  • This nut free granola recipe relies on tigernuts and seeds like pumpkin seeds, sunflower seeds, flax seeds, hemp seeds and chia seeds. So it’s certainly denser but also healthier and crunchier than regular granola.
  • Tigernuts make an excellent grain free option for a nut free grain free granola. They are tuberous roots that are high in prebiotic fiber and protein. Taste wise, tigernuts are nutty and naturally sweet. The texture is crunchy and hard, so soaking them first will help when they’re exposed to heat. You can slice them or use a food processor to quickly chop them.

Gluten Free Nut Free Granola – Low In Sugar Or Sugar Free

You have a variety of keto approved sweeteners to choose from: monk-fruit extract, stevia orerythritol. But if you’re are not looking for a keto granola recipe you can also use date sugar, maple sugar or coconut sugar, which are better than refined sugar. These granulated natural sweeteners will definitely enhance that crunchy granola feel.

To make a grain free sugar free cereal, leave the added sugar out and use only a few dried fruits or freeze-dried fruits of your choice.

The best low glycemic fruits to add to your homemade vegan keto granola, are berries, like raspberries, strawberries, blueberries and cranberries.

I like the freeze dried fruits because their antioxidants are preserved while freezing and also have no added sugar, no oil or preservatives unlike their heat dried counterparts. Plus their shelf-life is considerably longer.

How To Store This Gluten Free Nut Free Granola

Although my grain free nut free granola rarely lasts for more than a week or so, you should be able to store yours for quite some time, usually up to 3-4 weeks.

For this you need a clean airtight container (I prefer glass jars) and a dark place in your pantry or cupboard. Your granola will stay crisp and crunchy until your last serving is used.

The only concern is that the fat or the nuts could go rancid (if you use any) if you keep it for longer periods of time, so if you need to store it for months, either refrigeration or freezing should work.

Ways to Eat This Gluten Free Nut Free Grain Free Granola

  • You can add granola to your favorite cookie, muffin or cake recipe as topping.
  • Use it as topping for your dairy free yogurt.
  • As a cereal with any plant milk.
  • Ad a snack: straight out of the bag.
  • In homemade gluten free granola bars.
  • Mixed with fresh fruits.
  • A crunchy ice cream topping.
  • Add to a smoothie bowl.
  • As milkshake topping: Strawberry Milkshake / Pineapple Milkshake / Coffee Milkshake.

Tigernut Granola Recipe Tips

  1. Once you learn how to make a basic gluten free, nut free granola, you can experiment with all the flavors you like. You can add cinnamon, nutmeg, cardamom, unsweetened chocolate chips or cacao powder.
  2. Feel free to substitute in whatever you have on hand and make it your own granola flavor.
  3. To make this gluten free nut free granola – vegan, use coconut cream or oil instead of butter and honey.
  4. For a “clumpier” granola use more granulated sweetener, and avoid mixing while baking.

Prepare The Ingredients That Need Soaking

  • Take 1.3 cup of tigernuts and soak them in a bowl of water overnight.

  • Soak the dried black currants or any of your dried fruit in warm water for at least 30 minutes before use in the recipe. This will help remove dirt and any oil or sugar residue.

Chop And Slice

  • Once soaked discard the water, place the tigernuts in a food processor and pulse a few times until they resemble chopped nuts.

  • You can also thinly slice them with a knife if you prefer larger pieces.

Assemble The Gluten Free Nut Free Grain Free Granola

  • Preheat oven to 300F. Line a baking tray with parchment paper.

  • Into a large bowl toss chopped and sliced tigernuts, sunflower seeds, pumpkin seeds, chia seeds, hemp seeds, flaxseed meal, dried black currants, coconut cream (room temperature) or oil, the sweetener (if you use any) and salt.

  • Use a spatula to stir and combine.

  • Spread your grain free nut free granola mixture evenly on the prepared baking tray. Spread the granola in a single thin layer or use two baking trays if needed.

Bake The Granola

  • Bake for 40 minutes, stirring halfway through with a spatula. Your grain free granola is ready when is slightly golden brown and crisp.

Final Mix-ins

  • Cool down for 15 minutes on the tray then stir in the dried freeze fruits (I used raspberries and bananas).

Store The Granola

  • Transfer your cool granola into a glass jar. Store up to 3-4 weeks. This recipe makes about 4-5 cups of granola.

Tips For A Perfect Gluten Free Nut Free Tigernut Granola

  1. The serving size is 45 grams, visually it holds a little less than 1/2 cup.
  2. The same serving of regular granola usually has ~ 36g of carbs, this recipe has only 8.2 net carbs per serving.
  3. To make this recipe low sugar – don’t add any sweetener. To make the granola sugar free – remove the fruits. No need to add more cream or oil.
  4. The best low sugar fruit is raspberry (or strawberry) but if you can add some sweetness use any dried fruits or dried freeze fruits of your choice.
  5. To make keto granola recipe, choose a keto approved sweetener: monk-fruit extract, stevia orerythritol.
  6. This is a dairy free and vegan granola, but you can change it by swapping out the coconut cream for butter or honey if you like.
